Take a seat at the Oak
Castanet’s Jennifer Zielinski was at OAK+CRU’s opening and penned an article featuring an interview with Daniel Bibby, Delta Grand Okanagan Resort’s General Manager.
In the works since 2012, Oak + Cru Social Kitchen and Wine Bar officially opened its doors to the public Wednesday afternoon.
Daniel Bibby, Delta Grand Okanagan Resort general manager, says Oak and Cru is the leading piece in the hotel’s latest renovation.
“It was a $9.4 million dollar project,” he said. “A very significant change that really starts from Water street and carries right to the lagoon.”
Bibby says a lot of time has been spent on branding the new restaurant in the last four years.
“Oak, really comes from the wine making process. It’s all about the wine and the barrels. While Cru relates to growth. In France when you talk about a Grand Cru Chardonnay it’s the best,” he said.
Bibby says the concept of the restaurant is open to the kitchen to allow for social accessibility and engagement.
“Since day one our focus has been on keeping the project local. The whole concept, the menu concept was about being local, and so the contractors had to be local too, which is why we chose Edgecombe Builders,” Bibby said.
The interior design of the social kitchen was created by mackaywong and includes 263 seats.
Marriott International acquired the Delta Grand last year and the resort is now the 19th division of the corporation.
“It’s the largest hotel company in the world,” said Bibby. “Marriott represents 6,000 hotels and 128 countries.”
The Delta Grand Okanagan employs 450 people in the hotel and have recently hired an additional 51 employees for Oak + Cru.
